Tasting some new Trout
At Eden, we have been wondering about the future of Salmon and whether Trout would be a viable alternative. Recently, our Executive Head Chef, Adrian Collischon, and Operations Director, Jeremy Redgewell, took a trip to the Chalk Stream Foods Farm situated on the River Itchen and the River Test in order to get a glimpse into how they farm their fish. With the rivers being high in oxygen and full of vegetation for the trout, it means better quality and better taste. We wanted to test this out, so took some back to our on-site kitchens, smoked them in a conventional way and passed the finished product around. The verdict? Happy faces from everyone spelled out success. We will of course keep you posted if we decide that a change could be feasible in the future.
