Smoked Duck Rice Pancakes


Great to cook this at home as a shared dish to enjoy with friends. This Duck Pancake recipe tastes great and won't take hours to prepare, recreate this Asian classic with Adrian's easy recipe.

 

INGREDIENTS (for 20 portions)

Barbary Duck Breast 1 each
Red Pepper 45g
Yellow Pepper 45g
Donkey Carrot 45g
Cucumber 0.25each
Onion - Spring 10g
Hoi Sin 20g
Sweet chilli sauce  15g
Fresh Coriander  15g
Coriander Micro Leaf 0.15g
Red Amerynth Micro Leaf 0.15g
Rice Pancake 16cm

 

M ETHOD

1. Roast the duck and chill, slice thinly & juliene.

2. Juliene the carrot, cucumber, peppers, onion and duck then combine with the Hoi Sin and Sweet Chilli sauce, leave to marinade till the vegetables softens slightly (around 15 min).

3. Dip the pancakes in water for 20 seconds and lay on a clean table.

4. Add filling in a line across the pancake leaving ½ cm gap to each side from the edge of the pancake, dress the filling in micro leaf and fold each side in and over the mix, fold the bottom over the mix and then roll to make a tight spring roll shape.
