Thai Spiced Sea Bass Recipe

This week we’re making Thai Spiced Sea Bass. Use this easy recipe from Eden by Adrian Collischon to make yours this summer.

 

INGREDIENTS to make for 8                                   

4 Whole Sea Bass 300g - 400g
20g Red Chillies 
20g Fresh Garlic
40g Fresh Coriander 
20g Lemon grass
2 Lime
15g Fresh root Ginger 
2g Lime Leaves
100ml Olive Oil extra virgin
Maldon Sea Salt
Black cracked pepper

 

 

M E T H O D
 
1. Wash the sea bass under cold water & descale (you can ask your fishmonger to do this) and set to one side

2. For the marinade; Chop chilli, garlic, coriander & lemon grass & mix with oil

3. Zest & juice lime and add to marinade

4. Peel & finely grate ginger and add that to the marinade, bruise the lime leaf and add to the marinade also

5. Season the marinade with salt & pepper and pour over the fish making sure it is well coated

6. Leave to marinade in the fridge overnight or for at least 2-4 hours

7. Cook on the hot BBQ and cook for 3-5 min on each side basting with the marinade regulary, don’t be tempted to turn the fish too quickly as you want a nice crisp skin and for it not to be left on the grill.
