A delicious recipe packed with Mediterranean flavours

Roasted Mediterranean Vegetables Marinated in Balsamic Vinegar - recipe to make 8
INGREDIENTS
Aubergine 250g
Courgettes- Green 250g
Pepper Yellow 250g
Pepper Red 250g
Pepper Green 250g
Onion - Red 150g
Pepper - Black cracked 1g
Maldon Sea Salt 1g
Vinegar - Balsamic 50ml
Oil - Olive extra virgin 150ml
M E T H O D
1. Cut the courgette into 3mm slices at a slight angle, then slice the aubergine into 3mm disks.
2. Lay the aubergine and courgette out on a baking tray and drizzle with some of the oil and lightly season with salt & pepper, roast in oven for approximately 10min.
3. Cut the peppers in half and remove the stalks and seeds, cut the into random shaped chunks roughly the size of the courgette, toss peppers in a little oil, salt & pepper and roast in oven for
15min or till cooked with a slight crunch.
4. Peel onion and slice into 2mm rings lay on a baking sheet and drizzle a little oil & a little of the balsamic vinegar, roast in oven for 8-10 min.
5. Cool all cooked veg and mix with remaining oil & balsamic vinegar, and serve.
