Spring Onion, Courgette & Isle of Mull Tart

INGREDIENTS (for 8 portions)
Short Crust Pastry 267g:
Plain Flour 178g
Unsalted Butter 90g
Water 18ml
Green Courgettes 267 g
Extra Virgin Olive Oil 14ml
Black Cracked Pepper1.35g
Maldon Sea Salt 1.35g
Double Cream 200ml
Free Range Medium Eggs 2
Spring Onion 67g
Isle of Mull Cheddar 67g
M ETHOD
1. Sift Flour & add diced butter
2. With a paddle attachment mix flour & butter to breadcrumb texture on a slow speed
3. Slowly add the tap water till a soft dough forms - Careful you may not need all the water or you may need more & DO NOT OVER MIX
4. Push pastry together and wrap in cling film, leave to rest in a cool place for 30 min before rolling.
5. Place a sheet of greaseproof paper on a baking tray & place a 10" flan ring on top
6. Roll out the pastry, into a 14" disc and place into the flan ring and push pastry in to the corners & up the sides gently and overlap the top of the ring
7. Using the rolling pin roll over the top of the ring to cut the excess pastry so you are left with a neatly pastry lined flan ring
8. Next blind bake the pastry by lining the pastry generously with clingfilm and place baking beans to the top of the ring and fold the excess cling film over the top of the beans bake for 10 min 180°C
9. Remove from oven and remove the cling film with the baking beans and leave to cool slightly.
10. Meanwhile slice the courgettes in 2cm disks, place on a baking tray with a splash of olive oil, salt & pepper and roast for 8-10 mins
11. Next wash the spring onion and slice, light cook in a pan till just softened
12. Now mix the egg and cream together and pour into pastry, next add 3/4 of the grated cheese followed by the courgette & spring onion and a little seasoning, finally sprinkle the remaining cheese over the top. Bake in oven 180°C for 15-20 min or till just golden brown and the mix has set.
